Apple Pie.
Sitting down for a Christmas meal evokes a feeling, wonderful like no other. It is always a great way to reflect on the year that has been, while gearing u to usher in the New Year. Try out these two recipes and enjoy the festive bliss....
Ingredients
- 1 recipe pastry for a 9 inch double crust pie
- 1/2 cup unsalted butter
- 3 tablespoons all-purpose flour
- 1/4 cup water
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 8 Granny Smith apples - peeled, cored and sliced
Directions
- Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
Chicken and Rice Christmas Dish
Ingredients:
- 1 cup long-grain rice, uncooked
- 1 cup sliced celery
- 1 1/2 cups frozen peas
- 2 cups water
- 2 teaspoons salt
- 2 tablespoons butter
- 1 whole cooked diced chicken
- 2 tablespoons flour
- 1/8 teaspoon pepper
- 2/3 cup evaporated milk
- 1 cup shredded mild Cheddar or American cheese
Preparation:
- In a medium saucepan, combine rice, celery, water and 1 teaspoon salt. Heat to boiling.
- Cover and simmer for about 8 minutes; add peas and cook an additional 8 to 10 minutes, or until rice is tender and water is absorbed........
